What Time is Lunch?

Not eating meat today proved to be an uneasy task. It wasn't so much the meatless portion, but remembering to do so was difficult. Every time I looked in the fridge, my eyes would gravitate towards the chicken, I would continue to reach for it until I realized that hey--You're a vegetarian today! I've been trying to follow this non meat regimen twice a month. Although it is a practice of Buddhism, it more so serves as a spiritual purpose for me.    

For some people, cooking offers tranquility. For me, I get more enjoyment from the handsome foodograph of the final product. This was an easy dish to prepare and took little to no time to go from prep to set. Healthy & delish, Bon Appétit!
